BOTTARGA - This Mediterranean specialty is made from the salted and sun-dried roe of mullet (bottarga di muggine). It has a strong flavour not disimilar to anchovies. The flavour will diminish quite quickly if overcooked. The bottarga is usually shaved thin as a garnish or grated for sauces.
This is the grated version of the dried, Sardinian, Grey Mullet roe, known as Bottarga di Muggine.
iDELI also carries the "whole" version of the Grey Mullet roe. Bottarga di Muggine is beautiful shaved thinly on pasta. Add the Bottarga at the last minute just before serving and the Roe will start to melt into the pasta.
