Clotted cream is a rich, thick cream made by heating 45% fat cream to a high temperature. It is a difficult product to make and the method for obtaining consistent results is a closely guarded secret of the Yea Brand operators.
This cream is primarily used in desert applications and will hold its form if it is quinelled. Yea Clotted cream does not have a crust like traditional cornish clotted cream, but certainly has a defined caramel like flavour and delicious richness about it.
Perfect with scones, puddings, cakes, or any desert where cream is used as an accompaniment.
