Nebbiolo VerJus. Picked late February when the balance of sweetness and acidity is just right. Nebbiolo, being a very late harvest Italian variety is perfectly suited to VerJus production.
Unlike other Verjus producers who make Verjus as a side product using the crop thinned grapes, the L¡raH VerJus was grown and picked with the intention of making the entire crop into Verjus. This is not a side product, this is a core product. On the sweeter end of the verjus spectrum this is a great addition to marinades, dressings and dipping sauces.
